Some times your traditional tomato salsa is just a little bit too run of the mill every dish so why not switch things up with this fresh and flavoursome, oh so simple, mango salsa.

Ingredients

  • 2 Large ripe mangos – diced
  • 1 red onion – finely chopped
  • 2tsp lemon juice
  • Pinch of parsley
  • salt & pepper

How to

  1. Mix all ingredients together
  2. Allow to sit in the fridge for at least 30 minutes before serving
