A great dish for breakfast, lunch or dinner hash is a great way of using up bits and bobs left in the fridge, you can make it as simple or complex as you like and it can be made with any potatoes you like, sweet, regular or even purple. Here is my simple sweet potato has recipe, it’s vegan friendly and of course gluten free.
- 1 sweet potato peeled
- 1tsp sage salt
- 1tsp paprika
- 3tsp coconut oil
- Grate your sweet potato using a cheese grater
- Toss the grated sweet potato with the salt and paprika*
- Heat the coconut oil in a frying pan, add your sweet potato, fry on a low to medium heat until the potato is cooked through and pieces start to crisp
*If you was a more cake like hash, throw in an egg while mixing in the spices, here is where you can also add anything else you want, ham, vegetables, cheese.
